Coconut & Shrimp Noodles

Ingredients:

  • 1 Woh Hup Dried Chilli Shrimp Noodles
  • 1 lemongrass
  • 1 inch galangal
  • 1 clove garlic
  • 1 lime
  • 3 prawns
  • 1 1/2 cup water
  • 1/2 cup coconut milk
  • Coriander

Preparation:

1. Cut 1 lemongrass into small pieces.

2. Cut 1 inch galangal into slices.

3. Cut 1 clove garlic into slices.

4. Cut 1 lime into half.

5. Clean and devein 3 prawns.

6. Heat up 1 tbsp oil in a pan, saute galangal, garlic and lemongrass until fragrant.

7. Pour in 1 1/2 cup water and 1/2 cup coconut milk.

8. Add in all the seasoning packets.

9. Add in the noodles once boiled, cook for 2 minutes.

10. Add in the prawns and cook for another 2 minutes.

11. Squeeze in 1 lime.

12. Dish out, garnish with coriander and serve!
