Spicy Oil Noodles with Stir Fry Tomato & Egg

Ingredients:

  • 2 tomatoes
  • 1 stalk spring onion
  • 1 clove garlic
  • 2 eggs
  • Ground white pepper
  • Pinch of salt
  • 3 tbsp oil
  • 1/2 tsp light soy sauce
  • 1/2 tsp oyster sauce
  • 1 tsp sugar
  • 1 pack Woh Hup Dried Shanxi Spicy Oil Noodles

Preparation:

1. Score "X" at the bottom of 2 tomatoes.

2. Soak tomatoes in hot water.

3. Chop 1 stalk spring onion.

4. Mince 1 clove garlic.

5. Remove the skin of the tomatoes, cut into cubes.

6. Crack 2 eggs into a bowl.

7. Add some ground white pepper and a pinch of salt.

8. Heat up 2 tbsp oil in a pan, pour in the beaten egg.

9. Stir continously and dish out when the eggs are fully cooked.

10. Heat up 1 tbsp oil int he pan, saute mince garlic and the white part of spring onion until fragrant.

11. Add chopped tomatoes and stir fry until softened.

12. Add 1/2 tsp light soy sauce, 1/2 tsp oyster sauce and 1 tsp sugar.

13. Add egg and stir fry until combined.

14. Place the noodle into boiling water and cook for 3-4 minutes.

15. Pour in all the seasoning packets.

16. Mix until well combined.

17. Top with the stir fry tomato and egg.

18. Garnish with spring onion and serve!
