Mexican Turkey Meatballs


Ingredients:

  • 500g Turkey breast, minced
  • 50g Bread, coarsely grated
  • 1 can Kidney beans
  • 1 tbsp Woh Hup Volcanic Hot Sauce
  • 1 Onion, diced
  • 2 x 400g Chopped tomatoes
  • 125ml Water
  • 2 tbsp Non-fat yoghurt, to serve 
  • Cooking spray
  • Fresh coriander leaves, to serve

[Spice mixed, divided into two halves]

  • 1 tsp Smoked paprika
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder

Preparation:

1. Combine minced turkey, crumbs and half the spice mix in a bowl. Roll the mixture into 20 balls.

2. Lightly mist a non-stick skillet with olive oil and add meatballs, warm over medium heat until brown.

3. Dish out and thinly coat with oil again. Add onion, cook for 5 minutes, then pour in remaining spice mix along with tomatoes, beans and water. Return meatballs to pan, stir and bring to a boil.

4. Lower heat and simmer lid-on until meatballs are cooked.

5. Dish out, ready to serve with yoghurt and coriander.
